3 Meals for Meatless Mondays

With food prices (especially meats) at a seemingly all-time high, more people are taking the plunge into “Meatless Mondays” or another version of meatless meals at least once per week. Perhaps it isn’t to save some moolah, but rather to lower your intake of saturated fat and increase your intake of vegetables and fiber. Or maybe you have a really picky eater who won’t touch meat and are concerned with making sure they are getting in enough protein.

If any of these scenarios are true for you then these three meatless recipes are right up your alley: Family friendly, high protein, healthy, and not too scary. Enjoy!

Black Bean Quesadillas

Loaded with butternut squash, spinach, black beans and cheese, and wrapped in a whole wheat tortilla, these quesadillas are fun and flavorful.
