For an American Heart Month kick-off event this February, David Culp, owner and president of KC’s Catering, was faced with a unique challenge from ProMedica: Create a delicious and heart-healthy lunch.
Equipped with the American Heart Association’s Recipes For Your Heart booklet, Culp set out to create a spread that fit the challenge’s requirements. The result was a table of brightly-colored foods, including vegetables, salsas, rice, and chicken.
Eating healthy can sometimes feel like a chore, but Culp reassures that using the recipe book was easy. “The recipes were simple and required minimal ingredients,” he says. That’s reassuring to the rest of us who don’t cook for a living.
Culp, who has been in business since 1989, prepares dishes for a wide range of events – weddings, graduations, showers, corporate events, and other gatherings. His most popular catering options include baked potato bars and Mexican food buffets.
No matter what type of food he’s serving, he says that “the biggest secret to making any event successful is to always use fresh ingredients.” And to keep the options healthy, “use bright colored veggies, trim lean meats, olive oil and salt – sparingly.”
