Healthy Hard-Boiled Egg Recipes

So, you’ve decorated dozens of eggs, hid them around the house, found them, and now they’re sitting in your fridge. Are you wondering what to do with all those leftover hard-boiled eggs? Luckily, eggs, even hard-boiled, are diverse and can be used in multiple ways for a healthy meal or snack.

Allison Doriot, a dietetic intern with ProMedica Wellness, says that eggs are filled with protein — about 7 grams per egg. “Recent studies show that the cholesterol levels in egg yolks do not have as big of an effect on those with cardiovascular disease as they used to,” says Doriot. “So, enjoy whole eggs in moderation to get the nutrients that the yolk provides.”

To use up your leftover hard-boiled eggs, Doriot suggests a twist on a traditional favorite, deviled eggs. “Use plain Greek yogurt in your recipe instead of mayonnaise to increase the protein while lowering the fat content,” she says.

Avocado Toast

  • 2 slices bread
  • 1 hard-boiled egg
  • ¼ of an avocado

Switch up your breakfast with this quick, portable meal. Simply mash about 1/8 of an avocado onto each piece of toast and place the sliced eggs on top. To add some kick, sprinkle with red pepper flakes or garlic powder.

Breakfast Burrito

  • 1 hard-boiled egg
  • Sliced peppers, any color
  • ¼ cup cheddar cheese
  • 1 whole wheat tortilla
  • Plain Greek yogurt to top, about 2 oz.

Slice up your hard-boiled egg and fill your tortilla. Add peppers, sprinkle with cheese, and top with yogurt. Roll up the burrito and enjoy this protein-filled breakfast.

Egg Muffin Pizza

  • 1 English muffin
  • 1 hard-boiled egg
  • 2 slices tomato
  • ¼ cup mozzarella cheese

Craving pizza? Try an egg muffin pizza for lunch. Place sliced eggs and tomato on English muffin halves. Sprinkle with mozzarella cheese and broil until the cheese is melted.

Egg Salad (Serves four)

  • 8 hard-boiled eggs
  • 1 tablespoon mayonnaise
  • ¼ cup plain Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 teaspoon dried dill
  • 1 teaspoon paprika
  • ½ red onion, minced
  • Salt and pepper to taste

This “healthified” version of an egg salad sandwich cuts the calories of the traditional version. First, peel and chop your hard-boiled eggs. Then, stir all ingredients into a large bowl until combined. Serve on a slice of whole wheat bread as an open-faced sandwich. To really “healthify” this recipe, serve on top of salad greens or roll in a large Romaine leaf for a healthy lettuce-wrapped sandwich.

Egg Roll-up

  • 1 hard-boiled egg
  • ¼ of an avocado
  • 1 slice ham

This quick, healthful snack is full of protein. Slice your hard-boiled egg and avocado. Roll into your slice of ham and enjoy!
