Slow Cooker New Potatoes and Spring Vegetables

This recipe is a healthy and easy dish to make that’s perfect for every season. The fresh new potatoes are a great source of potassium and fresh carrots are rich in vitamin A. This dish is a great option for someone with diabetes because it is low in carbohydrates (12g) and fat (3½g).  Plus, the combination of sweet onion, dill weed, Dijon mustard, and lemon create a bright and flavorful taste.

You don’t have to turn on an oven with this dish; all you need to do is plug in the slow cooker, which makes it an easy summer side dish. Try this recipe with grilled chicken breast on the side for a healthy, balanced meal.
