Summer Berry Salad

Everyone knows that in general, salads are a healthy food. But why? The leafy vegetables offer lots of vitamins and minerals, particularly Vitamin E, an antioxidant. This vitamin helps protect your cells from damage and has been shown to increase blood flow to the brain, protecting your mental health.

Top a salad with fresh berries and you’ve got additional antioxidants and anthocyanin, a flavonoid that enhances memory and prevents mental decline. Berries may also aid in certain types of cancer prevention.
